Serum amyloid A (SAA) proteins are a series of apolipoproteins associated with high density lipoproteins in plasma, whose role is to transport cholesterol to the liver for excretion in the bile. They are secreted during the acute phase of inflamation and are involved in a number of infamatory diseases, including amalyoidosis, atheroscterosis and rheumatoid atherisis.
